The quarantine has led to a lot of time in the kitchen. On one of our rare outings I popped into the Thai Shop and bought some galangal, markut lime leaves, lemongrass, red chillies and fermented shrimp paste amongst other things. After much pounding in the mortar and pestle a most fragrant and spicy red chilli paste emerged. Later transformed into a delicious curry, it was absolutely delicious. Northern Thai and Laotian food is my favourite.
