Pasta with Oven Roasted Tomatoes and Burratta is a simple family favourite recipe. Slice a whole bunch of cherry tomatoes in half and line them up like soldiers in a cookie sheet. Drizzle with olive oil and put into a 300 degree oven for two hours. Yes hours. Resist eating them all when you take them out of the oven. Toss tomatoes and pepper (and roasted garlic if you like it) with cooked pasta (we prefer buccatini or spaghetti), drizzle more olive oil and finally top with a freshly slashed burrata and basil. Since olive oil is not just a cooking medium but an ingredient here, use the good stuff.
